Hamilton butcher opening retail shop this week

A veteran butcher in the Hamilton area, who works with small-scale Ontario farmers, is opening a retail shop this week.

J. Waldron Butchers, operated and owned by Jamie Waldron, is opening its doors at 353 Barton St. E. on Wednesday morning (Dec. 8). For the time being, the shop will be open three days per week: Wednesday (11 a.m. to 4:30 p.m.), Thursday (11-5:30) and Friday (11-4:30).

Waldron, a whole animal butcher, wrote in a social media post that all walk-in orders will be prepared on the spot.

“It will be a little different from what you’ve come to expect from a typical butcher shop,” a post said. “We plan on prepping all of the walk-in orders on the spot which means that you will pick your cut, determine how much you’re after and then watch as we get it all ready for you.”

The shop sells beef, pork and lamb, either whole or as sides. Beef and pork are also sold in 20-lb. shares, while chicken, bacon, sausage and beef burger sales are also available. Waldron has built his craft and business around butchering “responsibly reared” animals. He also strives to “put the whole animal to good use in order to curb food waste.

“I work with small scale Ontario farmers whose sole focus is traditional animal husbandry,” Waldron’s website (jwaldronbutchers.com) reads. “I personally concentrate on all aspects of traditional meat cutting, from whole carcass, to usable cuts that end up on your table.”

The shop on Barton is also offering workshops on animal butchery, which are limited to four people at a time.

As part of its opening, J. Waldron Butchers has partnered with Neighbour 2 Neighbour (N2N), a nonprofit organization that attempts to reduce food insecurity in Hamilton. The shop said it was prompted to contribute after learning that about 17,070 people in Hamilton use a food bank in a typical month.

Waldron is donating one pound of ground beef to N2N for every 1.5 pounds of ground beef purchased through the shop’s website (jwaldronbutchers.com).

“The final day to order is December 18 by noon for a Dec. 23 pickup date,” the post read. “Help us help N2N and the 17,070 people who need it. Thank you.”
