All three Earth to Table: Bread Bar locations – including two in Hamilton – will become Bardō restaurants next year, with the name pronounced ‘bar-dough,’ a play on the much-loved dough and the craveable menus locals have enjoyed for the past 14 years.

The change will take place in early February 2024 at the James Street location in Hamilton and at the Gordon Street restaurant in Guelph, though the transformation will happen at all three Bardō locations with new branding and design elements and a full renovation coming to the second Hamilton restaurant on Locke Street.

Bardō, owned by Ancaster-based Pearle Hospitality, is also set to open a new location in Elora in 2025.

Bardō’s elevated menu will continue the commitment to Bread Bar’s ethos: ‘Good Ingredients Matter.’ The new name encapsulates the dedication to quality and culinary history of the company, with a focus on its much-loved dough featured throughout the menu.

While embracing the new name, Bardō will maintain the same team and culinary promise Bread Bar guests have grown to love. The fan-favourite stone-baked pizzas with the unique ingredients and names (Sweet Cheery Pie, Princess pickle, The Hulk and Miso Sweet) will remain at Bardō, as well as its lunch and dinner menus – featuring soups, salads, mains such as Short Rib on a bun and Grain Bowls and plenty of sandwich options – and all-you-can-eat Sunday brunch.

Family-owned Pearle Hospitality – founded by the Ciancone family in 1936 – acquired the Bread Bar properties in March 2021. The Pearle Hospitality portfolio also includes a golf club, a farm, a luxury hotel and Pearle Weddings & Events, a group specializing in staging weddings and events at Pearle Hospitality venues, such as Ancaster Mill, Cambridge Mill, Elora Mill and the Pearle Hotel and Spa in Burlington.
